Italian Carbonara Tsukemen in Nakameguro, Tokyo

For tsukemen in Nakameguro, Mitsuyado Seimen (三ツ矢堂製麺) serves some CRAZY bowls. For all of their tsukemen (dipping ramen), the noodles are fresh and made in house.

Mitsuyado Seimen has several branches throughout Japan, and some overseas. But Nakameguro is their flagship. Besides their gold standard tsukemen dishes, we’re looking at some of their wacky, seasonal tsukemen. Let’s get to it!

Carbonara Tsukemen

Like it was concocted in some umami lab, this restaurant’s Italian carbonara tsukemen (dipping ramen) is an oddly beautiful marriage of East and West.

The dipping broth is decidedly carbonara creamy, with plenty of cheese and some milk. Furthermore, there are little pieces of soft bacon in the broth.

The noodles are gently covered by an egg blanket. This blanket is sprinkled with negi and parmesan cheese. In addition, the egg white is uniquely prepared – it’s almost like cotton candy, or like you’re eating a melting cloud.


Like with all their tsukemen, you can order your noodles hot or cold. For the noodle amount, pictured is “nami,” or the regular amount.

During the summer months, they’ll often serve a spicy tsukemen, like this one here. The broth here is actually cold (temperature-wise).

But it’s insanely spicy, to the point where I was dumping out the napkin holder to take care of my sweaty brow. Since it’s miso-based, it’s a bit sweet too. Delicious!


The other selling point of this dish is little strips of shabu shabu style pork. This is an appropriate contrast to the crunch from the bean sprouts, cucumber and little bits of negi.

Cheese Tsukemen?

They serve 2 tsukemen year-round. One features a chicken and shoyu (soy sauce) based broth. The other is a heavier pork bone and fish broth. Both have a hint of yuzu (a Japanese citrus fruit). You can choose thin or thick noodles.

But to keep it wacky, feel free to order a side of thick cheese sauce (like cheddar). I don’t think this cheese is necessary. But it does make for interesting photos (and it does pair fine with the saltier broth)!

Miso Ja Ja Men

Here’s another limited time dish that’s been served past summers – Ja Ja men. Ja ja men is influenced by Chinese cuisine. The thick, sticky sauce is made from ground pork miso. The miso ensures the dish has wonderful sweet, tangy flavor. The crunchy cucumbers and pickles and perfect.

In conclusion, no matter the season, Mitsuyado Seimen is the spot for tsukemen in Nakameguro. Their excellent noodles and creativity make it a fun place to visit.
